Born from the collaboration with Chef Alessandro Boglione, Michelin Star 2010-2015 at the castle of Grinzane, offers 10 menus changing daily and 10 traditional dishes of the chef always present, that best represent the enogastronomic philosophy, 5 of which, combined with the precious winter black truffle. The resident Chef Francesco Crimi is always present to realize your every gastronomic desire.

Breakfast is the most important meal of the day and to start it better, from 7.30 to 9.30 served a rich breakfast buffet. The choice is varied: many different types of bread to go with the Km0 jams of Valle d’Aosta or sweet honey directly in the comb.

For lunch you can take advantage of the lounge bar and the panoramic terrace, equipped with tables, sofas and deckchairs and direct access from the ski slope (3BIS). Every day you will find delicious proposals for a quick and tasty light lunch.

The method of selecting wines marries the cooking philosophy of Chef Alessadro Boglione, a network of relationships with small quality producers allows our Maitre & Sommelier Nicola Loiodice to place alongside the large labels even less known bottles, but of considerable interest.
360 are the selected labels, which thanks to the great passion of Maitre, makes the wine card always in constant motion, embracing the Valdostan territory and pushing beyond national borders.
Finally, two tasting itineraries are offered in combination, both dedicated to two important singers of Italian music, Fabrizio De André and Rino Gaetano.
The first, “e ‘nt’a barca du vin ghe naveghiemu” taken from the beautiful song “Crêuza de mä by Fabrizio De André, completely dedicated to the world of wine, while in second, “hand to hand … experimenting! “ taken from the song “A mano A mano” by the singer-songwriter Rino Gaetano, it represents the union between the world of wine and Mixology. Both paths are a life experience, which will involve all the senses!
